Wan Hao hosts renowned dim sum chefs from JW Marriott Hong Kong – Marriott Hotel Singapore

If you love dim sum, you should pick up the phone and call Wan Hao at Marriott Hotel Singapore now. From now to 22 March 2015, renowned dim sum chefs Chow Shing Yip and Liu Wai Hung from JW Marriott Hotel Hong Kong are guest starring at Wan Hao, the Chinese restaurant located on the third floor of Marriott Singapore.

On my most recent visit to Wan Hao, I was rather impressed with the quality and presentation of the dim sums. In terms of taste, the dim sums were generally good. Of course, some were more delectable than others but overall, the quality is consistent.

That one dim sum that floored me completely is the Baked BBQ Pork and Egg White Puff. If you think Tim Ho Wan’s baked BBQ bun is great, you haven’t tried this version yet. For a char-siew-bao addict like me, I have to confess that this is probably the most memorable baked BBQ bun that I’ve ever had in Singapore. Because of the use of egg white in its dough, the crust is light, airy and crisp. The texture has a slight similarity to a meringue, crispy on the outside and airy inside. The char siew filling was equally good – juicy and moist.

I like the Steamed Scallop with Fungus and Vegetable Dumpling. It was the contrasting texture between the succulent scallop and crunchy vegetable that made an impression on me. The crystal clear dumpling skin was thin enough to show the gorgeous ingredients and yet hold them together at the same time.

For those who love the pork dumpling, you have to try the tasty Steamed Crab Roe with Minced Pork in Superior Soup Bun. But let me warn you first, this dumpling is full of broth. One mishap and be prepared to squirt the liquid all over yourself. I’m writing this because that was what happened to me. For the rest of the afternoon, I did smell like a walking dumpling.

The Abalone and Taro Puff is definitely Instagram worthy. The braised baby abalone resting on top of a small basket of fried taro looks amazing. The fried taro was not overly oily and the skin was flakey.

Unfortunately, for the other dim sums that I’ve tried, they were decent but forgettable. The Crispy Shrimp Dumpling with Supreme Soup was nothing spectacular although I did like the flavourful pork, chicken and vegetable oil soup.

Having said that, it is still worthwhile to make your way there. Just be more selective with the dishes, I’m sure you will have a good time. When you’re there, don’t forget to order Wan Hao’s Peking Duck! It is simply out of this world.
