My NYC friend knows I love meat so much that I wouldn’t miss any opportunity to have a good slab of meat. Located within the Chelsea district of New York City, Hill Country Barbecue Market is a restaurant that you must visit if you love your meat and when you’re in the Big Apple.
The restaurant was packed to the brim when we arrived at the restaurant. The restaurant is so popular that many guests without reservation had to wait for hours to get a table. This is why you’ve been advised to make a reservation before heading down.
Every guest is given a meal ticket that serves as a menu and also an ordering sheet. Other than the drinks, which the waitress will take your order, you will have to go to the meat counter to order your food. The butcher will weigh the glistening cooked meat, place them on sheets of butcher paper and wrap them before passing it to you. You can order as much or as little as you want. Just like how the butcher sells his meat to his customers in the market.

When you are here, you must order Hill Country’s signature Beef Brisket. The meat is done in either moist or lean. Although both are marinated the same way, I strongly recommend the moist cut. Unlike the lean cut which can be rather tough, the moist beef brisket is more tender, juicy and flavourful because of the higher fat content. I particularly love the charred parts of the meat because it is slightly crunchy and crispy. You will not regret for the extra calories.

The smoky pork spare ribs are equally gorgeous. The meat is marinated with salt and pepper, and grilled to perfection. Every slab of meat is mouthwatering. This is so good that you would probably want to clean out any meat left on the bones.

For those who can take more spicy food, the HC Hot Link sausage is another good option. This fiercely peppery sausage is great! It comes in two versions, original and palaeño cheese.
it's a meat galore
For the sides, the ever popular is the Longhorn Cheddar Mac & Cheese. The sides are served in three sizes, 8, 16 and 32 ounces. If you’re game for a different flavour, try the Sweet Potato Bourbon Mash. Infused with the liquor, you will either like or hate this orangery brown mash. The Collard Greens with Smoked Bacon goes very well with the slabs of meat too.
The dessert station
For those with a sweet tooth, there are its Original PB&J Cupcake, Texas Pecan Pie and Cowboy Brownie.
Hill Country has served her customers for over five years now. It’s a pity that I didn’t discover this gem earlier. If you’re in town and love your meat, Hill Country Barbecue Market is definitely a must-visit restaurant when you’re in New York City.
